Practical Technique of Stir Frying Pork Belly
Stir fry is one of the best cooking methods that you must master. Whenever I want something quick, easy, and flavorful. I always come back to stir fry.
It basically involves 2 movements, stirring and frying. However, when cooking pork belly, there is a trick to it. Stir fry, by definition, means stirring and frying at the same time. However, to get it to be crispy. You must keep cooking until golden brown and the oil is released from the meat.

Another replacement is Tamari. Tamari, however, brings a little more sweetness into our dish. So, only use Tamari if you run out of soy sauce or Bragg Liquid Aminos.
Salt and Pepper: For the pepper, use black pepper instead of white pepper. Black pepper provides a subtle hint of heat and complexity. Its pungent and slightly earthy notes complement the savory flavors of the pork.
Red Bell Pepper (1 pepper): Use any bell pepper you like. Feel free to mix the yellow, green, and red. But I like red bell pepper more; it is a little sweeter, complementing pork belly’s savory profile. In addition, it also looks more visually appealing when cooked.
Onion (1 onion): Chop the onion into slices. Onion adds extra flavor and a pleasant aroma to our stir fry. Besides, it also contributes to a slightly crunchy texture of the dish when cooked.
Garlic (4 cloves): Mince the garlic. For the same reason, garlic adds a delightful aroma to our pork coconut milk stir-fry dish.
Oil (1 tablespoon): This is to kick-start our stir-frying. Any cooking oil works; Use pork lard if you have it.

Step 1: Preparing the ingredients
Gather all your ingredients and prepare “mise en place.”
Step 2: Preparing the Pork Belly Slices
Preparing the pork belly is as easy as 1 2 3. Just slice the pork belly as thinly as you can. This ensures our pork belly will achieve golden brown status in no time using the stir fry method. The trick to slicing pork belly effortlessly is to cut it when the meat is still half frozen. Not too soft, not too hard, is the best time to cut the pork thinly.
Step 3: Seasoning the pork
Now, start seasoning the pork with salt and black pepper. Use any amount you like with the black pepper. But for the salt, just light salting will do. You can always add more salt during the last stage of cooking.
Step 4: Stir-frying the pork first
Put 1 tablespoon of oil in a skillet over medium-high heat. I am using a stainless steel wok here. As soon as the wok gets hot, I add in the pork belly and start stir-frying. Bear in mind the pork will be cooked in no time.
But do not stop; keep stirring until it becomes golden brown and crispy, and you will see the meat releasing lots of pork lard. Set the meat asides and scoop out the excess pork fat when it’s done.
Step 5: Stir fry aromatics and veggie
Start stir-frying the sliced onion and minced garlic on the same wok. After a couple of minutes, when the onion becomes translucent, add red bell pepper and stir fry for another couple minutes until it softens.
Step 6: Incorporating the coconut milk
Pour in the coconut milk and the soy sauce. Return our crispy pork back into the wok. Mixed well. Reduce heat to medium-low, let the stir fry cook, and simmer for another 3 minutes to allow the flavors to meld together. Now, salt-taste our delicious meal, and see if we need more salt or soy sauce.
